Directly responsible for all kitchen functions including food purchasing, preparation and maintenance of quality standards; sanitation and cleanliness; training of employees in methods of cooking, preparation, plate presentation, portion and cost control and sanitation and cleanliness. The chef is responsible for every aspect of the food that is prepared and served. Behind the scenes of any fine dining kitchen, executive chefs are creating menus, managing kitchen staff, and making sure that food leaving the kitchen is up to standards.
